Chicken Tikka Masala by Sobia

Ingredients
For the Marinade:
- Sobia’s Murgh Tikka Spice Mix
- 1.5kg diced chicken breast
For the sauce:
- Oil for frying
- 2 diced onions
- 1hpd tsp ginger and garlic purée
- 4 tbsp blended tin tomatoes
- Green chillies (optional)
- 4-5 tbsp fresh yoghurt
- Salt to taste
- 1.5 tsp garam masala
- 2tsp basar (my own red chilli mix)
- 2 heaped tsp ground coriander
- Fresh chopped coriander
- Water as required
Method
- Roast chicken (marinated overnight) at 220-230 degrees for approx 25 or until cooked through
- Heat a little oil
- Fry onions until caramelised
- Stir in ginger and garlic (1 min)
- Add tomato (1 min)
- Add all spices and salt along with yoghurt and sauté until combined (approx 1 min)
- Stir in green chillies
- Stir stir n cooked chicken tikka and add a little water to loosen the curry a little
- Sprinkle in fresh coriander and serve
